About this Specialty Coffee
Sourced from Finca Kotowa in Panama's high-altitude growing region, this natural-process Chákira is produced by Ricardo Koyner — a lot that showcases the variety's capacity for intensity and complexity when paired with careful natural processing. Dried slowly on raised beds, the whole cherry ferments with the bean intact, concentrating fruit-forward character and building a distinctive layered sweetness.
Roasted very light by Julith to protect its volatile aromatics, the cup opens vibrant and juicy — kiwi and grapefruit lead, followed by a delicate orange blossom florality. As the cup cools, milk chocolate emerges to round out the profile, adding depth against the bright, crisp acidity. The finish is smooth, sweet, and lingering, with excellent clarity for a natural.
This lot's dynamic range makes it a standout for filter brewing, where its fruit intensity and floral aromatics have room to fully develop. A high-impact cup for drinkers seeking bold, tropical complexity balanced by a clean, chocolate-driven finish.
