ANAYA Farm has been meticulously cultivated and tended by the Aranda Gomez family for over three decades. Encompassing 4.5 hectares, the farm is nestled within two picturesque mountain ranges, teeming with indigenous flora and fauna. Lush fruit trees dot the landscape, complemented by bamboo groves that sway harmoniously to the evening breeze. Sergio Darío Aranda Gómez, a dedicated coffee producer, has devoted more than 15 years to perfecting the craft of coffee cultivation. Viewing coffee production as his passion, Sergio is constantly expanding his knowledge and skills, aiming to excel in the world of specialty coffee. From carefully evaluating coffee beans to employing precise fermentation methods, he guarantees a consistently outstanding final product that is enjoyed at tables every day, Following the harvest season, cherries undergo a traditional floating process using meticulously filtered water to preserve product quality. Subsequently, the coffee undergoes fermentation with selectively chosen microorganisms to enhance its sensory attributes. Sun-drying for nearly 8 days ensues until the beans attain an ideal moisture content of 10 to 11%. To safeguard against environmental moisture, dried coffee is stored in bags, while each batch undergoes rigorous physical and sensory assessments to uphold stringent quality standards.
